Why does honey not go bad even if kept for a long time?

Honey is made from the nectar of the flowers by the honey bees. It is stored in the bees pouch where it is broken down by a process called inversion into two or more simple sugars called fructose and glucose. After it is deposited in the hive by the bees, most of the water is allowed to evaporate from it so that it thickens. Bees also add enzymes to it which enhances its flavour. Honey stays good for a long time because of the presence of sugar which acts as a natural preservative.
